This design is done using the technique of brush embroidery which has a slightly different twist on lace work as it is done by hand instead of a lace mould (when you see the same few patterns repeated everywhere), giving the cake a personal touch.

For a modern, sharp-edged look the cake needs to be coated with either ganache or marzipan to give a good firm base before icing.

It has then been finished off with a beautifully hand crafted – individually wired petal by petal – peony, dusted with colour to create realism.
